One of my very favorite breakfasts sounds weird, but I think it is wonderful! I am long-time vegetarian, used to teach veg classes. This is so healthy, has everything you need for a great start to the day. I layer in this order:

Green olives
Large dollop cottage cheese
Wheat germ
Flax seed meal
Crushed walnuts

I make good protein shake
- 1 cup cottage cheese
- 1 big (0,5 l) kefir
- 1 banana
- 2-3 pieces of garlic (to mask the taste of banana)
- 1 spoon of trigonella seeds (folk wisdom here. They are also quite healthy anyway).
Mix in blender, drink. Perfect. But not for weak-willed

Easy Quiche....

1 small pot cottage cheese, mix in 1 beaten egg.
Add whatever you like, I use a salmon steak (minus the crappy bits and skin). I use a glass oven dish, bake it at 180 for about 40 mins or until solid.
That's gotta be healthy!!!!!

I have to admit that in all of my seventeen years, I've probably eaten cottage cheese about three times. lol I was always freaked out by the texture, the taste, and especially thinking about what it really is. My parents are both avid 'Cottage Cheese-ers' and regularly offer me tastes of their concoctions. I naturally refuse. XD I was peeking around the posts for adding protein into my diet and stumbled across this wonderful page right here. I really hadn't any idea that cottage cheese was so healthy and after reading about three recipes, I made up my mind. I'm going to 'edit' my 'diet' and throw some cheese on it. lol Thanks a bunch for committing to educate the non-believers. ^.^

Susan, if I read your description correctly, you are looking for a recipe for "Verenikies" - the Russian word for Pierogies filled with dry curd cottage cheese and a couple of other things. I will try to find my recipe and post it shortly, although there are lots of other ones online too.

SC and CC Vegetable Salad

4 oz Cottage Cheese (low fat or fat free) plus
1-2 Tbs Sour Cream (fat free)
Pepper to taste

Dice (very small pieces, e.g., 1/4-inch) any or all fresh vegetables like cucumber, radishes, onion, green onion, chives, parsley, tomato, celery, etc.

Imitation bacon bits can also be added as well as diced
pickles.

A really great lunch that can be fat free, high in protein and low in calories.

Oh, I just thought of another. Buckwheat crepes stuffed with cottage cheese and blueberry sauce. (Just cook blueberries for a few minutes till they break down into a slightly syrupy sauce). This is so decadent now one you feed this to will suspect it's good for you.
