		<description>Cottage Cheese, Egg, and Tomato Salad

This is one of those &quot;add as much as you like&quot; type toss-ups.

Hard Boiled eggs 3-4, roughly chopped
Ripe Tomatoes, 1-2 cut into slivers
Cottage Cheese, I recommend 1% but skim is also delicious
Salt, add to taste, I recommend sea salt
Pepper, add to taste

Parsley or Chives, minced or chopped, add to taste 

Mix it up and serve chilled. This makes an awesome lunch, and I LOVED it as a child. My mom found this recipe in one of those bizarre 1940&#039;s &quot;easy cook&quot; recipe books she found at my Grandmother&#039;s. I like to eat it on Saltines or Melba snacks when I feel like I need breads.</description>

I find that cottage cheese makes a great substitution in many dips that require mayonnaise and other &quot;junk&quot; bases. My favorite dip of all time is cottage cheese and some cocktail sauce (admittedly not the healthiest...) topped with any or all of shredded cheese, red peppers, tomatoes, green onion, and canned shrimp.</description>

		<description>My Yiddish grandmother used to mix egg noodles with cottage cheese for me when I was little. Spinach pasta works great here too. I wonder if this would taste good with brown rice pasta? Probably. It&#039;s great comfort food, and fast.

Another Nice Yiddish Grandmother snack: canned pineapple and cottage cheese. But after years of avoiding sugar and trying to eat mostly local fruit, I haven&#039;t really eaten canned pineapple in a while. 

Plain cottage cheese is great, too! Perfect fast protein when rushing from one place to another on the subway with little time to stop and eat something substantial.</description>
